BALTHAZAR ST. MORITZ
Francesco Germani, born in Milano in 1989, comes from a family of restaurant owners and meat traders, thus becoming aware of the cuisine world since younghood.
After many prestigious employments, he becomes the personal Chef of the Gucci family and enters the tv cooking talent “Top Chef Italia”.
Since December 2017, he is also the Executive Chef of the Balthazar St. MoritzRestaurant, the first public restaurant of the Gucci family.
Cuisine philosophy: what are your creations to you?
My creations represent a never-ending research, fueled with curiosity and spontaneity. In other words, they depict me not only in my cuisine, but in my life as a whole.
In which sense food is “feasting together”?
Food is sharing: a fundamental part of our job is to be able to share, because only by doing that there is a feast. A shared meal is joy.
What does “tasting life” mean to you?
“Tasting life” means to follow your personal inclinations and not to follow others’ paths, but to always make your own.
Is there something for you that ties passion and talent together and keep them alive every day?
Passion and talent are tied together by will: without the will to always keep going, they are not enough.
Tell us more about your cuisine, between tradition and innovation:
Curiosity is the prime ingredient of my cuisine: to be open to every experience we live daily.
My special dish (an homage to Enrico e Remo and to their Fassone and Caviar escalope) is made by pairing deer meat marinated in Cognac with the herbal freshness of Oyster and apple: raw ingredients very different that stimulated and inspired me to create something new.
