The starred Restaurant of Trussardi Groupbets on the young talent Roberto Conti and appoints him as the new Executive Chef of Il Ristorante Trussardialla Scala, after 6 years of working as their staff. A great passion for cooking, a great respect for the Italian tradition, creativity, top quality ingredients and new techniques are what his cuisine is about.

I share Trussardi’s vision of revisiting our traditional dishes by reimaging them in a new innovative key”.

Cuisine philosophy: what are your creations to you?

I always take the first step starting from tradition, the natural Italian attitude of nourishing the taste and enhancing the flavor. Knowledge of the products and respect for their seasonality are what add shape to my intuition and my creativity.

In which sense food is “feasting together”?

Food has always been the best way to share special moments among family and friends. It is the perfect way to be together and gather people.

What does “tasting life” mean to you?

Never have to renounce life’s pleasures.

Is there something for you that ties passion and talent together and keep them alive every day?

The will of doing things right, always. The need of renewing, of discovering new ingredients and flavours. The pride of seeing the actual dishes which were only inside my mind and finding out that they work.


Tell us more about your cuisine, between tradition and innovation:

My dishes are created in respect of our gastronomic origins and made out of creativity, with new techniques applied to Italian traditional cooking. My bases are the prime raw ingredients and the reimage of traditional dishes with the right amount of innovation.
